Meet Ericka McKim, Navy veteran and Founder of And I Like It, a Texas-based dessert company creating rich, creamy cheesecake cups that are low in sugar and gluten-free.
After 10 years in the Navy, medical retirement brought dietary changes that meant losing foods she loved. Ericka set out to bring that joy back, developing FirstRate, her sweetener blend, and eventually creating single-serve cheesecake cups. Today, her company reaches customers through DFW markets, retail partners, and nationwide refrigerated shipping.
